If you’re anything like me and like to snack then this time of year is really dangerous given how many sweet and buttery snacks seem to be within easy reach. Tis the season when most of our good-intentioned eating plans are derailed by that afternoon cookie (or three) or some of that hot buttered rum. While part of the joy of this season is indulging in those things that you only eat once a year, it can still do a number on your diet. I know it’s bad when I realize that I’ve gone a day or more without anything naturally green in my diet – the green frosting on holiday cookies doesn’t count!
So I was intrigued when a few weeks ago I had the opportunity to talk with Lori Corsi from Twin Cakes Bakery in North Carolina. Together with her twin sister Michelle, their company is focused on “a new way to snack.” Their products, things like biscotti, crackers, flatbreads, and even some sweets, are not only gluten-free but also vegan and raw. As Lori explained to me, the difference with raw foods is that the foods are dehydrated at a low temperature for a long period of time so that the enzymes that are naturally found in the ingredients stay alive. This is different from baking which, due to the higher temperatures involved, does unfortunately kill those enzymes. So, in a nutshell, while you’re eating raw food it’s actually benefiting you as well.
Like I said, I was intrigued. I’d heard of raw foods before but, as a professionally trained pastry chef, I’m fairly sure that when I was given my pastry arts diploma I signed a contract saying that I would promise to love, honor, and cherish all things baked and buttery. Could a raw food snack really measure up, I wondered, to so-called ‘normal’ snacks? Based on Lori’s suggestion, I purchased some of Twin Cakes Bakery’s biscotti, their Brownie Bites, and their Kale Crackers and Spiced Cheez Crackers.
On the day the Twin Cakes Bakery goodies arrived at my doorstep I must admit that I was seriously craving some Cheetos. Horrible, yes I know, but that’s the truth and that’s what these treats were up against. I figured I’d give the Twin Cakes Bakery goodies a shot and then, in all reality, figured that I’d be headed out to get my Cheetos fix. Let’s just say I never made it out the door.
I was absolutely 100% blown away by the flavor packed into every goodie. The Spiced Cheez Crackers were the first I tried (they seemed the closest to Cheetos in my mind) and not only were they cheesy and a little bit spicy but they also had layers of flavors that I never anticipated. I dove into the Brownie Bites next thinking, c’mon, there’s no way these brownies can compare with the killer brownies I make. Once again I was caught off guard by how good they were – it was like eating little bits of deeply chocolate soft cookies. The Kale crackers were also delicious (and naturally green – hooray!) and the biscotti later made an excellent snack with some afternoon tea.
Originally when I ordered these treats I figured I could take them with me on some travel I had coming up so that it would help balance out the less-than-healthy food you find in airports. Turns out the snacks didn’t even last the week until my trip started. Honestly, these were so good I prefered to snack on these then my regular snacks. And you have to love that not only do they taste amazing but that they’re actually good for you too. I’ve got another order already on the way to help me offset some of the tasty holiday treats I’ll be consuming this month.
