Indulgence Is Not Dead

The professional pastry chef in me sighed with relief when I read this article in Food Business News. Reports from a recent panel found that while health and wellness is all the rage in the food world, that doesn’t mean that consumers have gone off sweets and treats altogether.

It definitely makes sense – none of us is perfect and while consumers may be trying to eat healthier overall, treats in moderation are not the end of the world (again, remember that I’m a pastry chef so definitely a little biased here!).

Interesting takeaways for pastry entrepreneurs from the article talk about offering smaller and/or single serving sizes. People may no longer be interested in taking an entire cake home on a regular basis – but a slice of cake now and again is very tempting.
